This is a favourite recipe of everyone here at Ninabrook Designs....and a great time to make it when zucchini is abundant in the garden. Enjoy!

Chocolate Zucchini Cake

1/2 cup butter or marg
1/2 cup veg oil
1 3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup sour milk

2 1/2 cups flour
4 T Cocoa
1/2 t Bkg powder
1 t Bkg soda
1/2 t cinnamon

2 cups grated zucchini
1/4 chocolate chips

Cream together butter, oil and sugar. Add eggs, vanilla and sour milk and mix well. Add dry ingredients to creamed mixture and beat well. Stir in zucchini.
Pour into 9x13 or two 8" square pans lined with wax paper. Sprinkle with chocolate chips.

Bake at 350 for 30-40 until cake tests done.

The recent CHA (Craft and Hobby Association) TRADE SHOW in Chicago was FANTASTIC! Talk about information and INSPIRATION wherever you looked (even an upside down Christmas tree!). I was in Zehrs the other day and the lady in front of me at the till doled out over $12 for 2 "just your average, everyday, not so special" greeting cards. She wasn't taken back by the price, but I was STUNNED....and it spurred me on to pull out all of my scraps, rub ons and embellishments that very night! Here's 3 OTHER reasons that you might want to create your own cards...

1) They are PERSONAL (communication is becoming increasingly impersonal...more and more it's by email instead of by phone or in person).

All the build up...all the excitement and Scrapfest is now over and done (until Oshawa in October of course). Sometimes my life seems like a constant looking ahead, projecting, planning and then AFTER the event it's hard to re-focus, difficult to re-group and switch gears.

It was AMAZING to meet so many of you face to face! We truly had a GREAT time and WOW....can I just say....we were B U S Y the entire time!!! I glanced up at 4 p.m. on Friday and to my astonishment we already had a CROWD of scrapbookers happily digging through our product and the line up was forming! Sorry to those of you who had to wait...next time we'll offer some freebies or fun stuff to those in line.

Thanks for your ongoing support....we have the BEST CUSTOMERS ever!

I'm not even really a "muffin person"...but I added milk chocolate chips to these, and they're more like DESSERT! Soooo melt in your mouth YUMMY. ANOTHER CARD IDEA!

Instructions:
-cut an 8 1/2"x 11" sheet of white cardstock in half (horizontally)
-fold both pieces in half, creating 2 cards
-from your stash of scraps and embellishments, find 3 co-ordinating papers, 1 scrap of matching cardstock, one button, a circle, one large charm or fabric flower, one rub on transfer or a stamp.

Here are the dimensions of the various pieces:
-long orange patterned strip: 1/2" x 3 3/4"
-torquoise patterned paper: 1" x 2 1/4"
-green patterned square: 1 1/2" x 1 1/2"
-turquoise CARDSTOCK (adhered along inside of card) is 1 1/4" x 5 1/2"

The orange patterned strip aligns with the left edge of the card and is approx. 1/2" from the bottom edge of the card. Refer to the pic. to arrange your papers and embellishments. Using scissors, cut along the bottom edge of the patterned pieces on that the turquoise cardstock on the inside of the card is seen.

Voila! Now onto your second card!!!

Gingersnaps-SOOO Yummy!

3/4 cup hard margarine or butter, softened
1 cup granulated sugar
1 egg
1/2 fancy molasses

2 1/2 cups All-purpose flour
2 tsp Baking soda
2 tsp Ginger
1 tsp ground cinnamon
1/2 tsp salt

1/4 (approx) granulated sugar

Cream margarine and first amount of sugar in large bowl. Add egg and molasses. Beat well.

Combine next 5 ingredients in medium bowl. Add to margarine mixture in 2 additions, mixing well after each addition until no dry flour remains. Roll into 1 inch balls.

Roll balls in second amount of sugar in small bowl until coated. Arrange about 2 inches apart on greased cookie sheets. Bake in 350 oven for about 10 mins. Let stand on cookie sheets for 5 mins. Remove cookies from cookie sheets and place on wire racks to cool. Makes about 90 cookies.

1 cookie=45 calories, 1.7 g total fat (1.1g Mono, 0.2 g Poly, 0.4 g Sat) 2 mg cholesterol, 7 g carbohydrate, trace fibre, trace protein, 62 mg sodium,

Mad Hatter Salad!

Ingredients:

1 (16 ounce) package coleslaw mix
8 green onions, chopped (I don't use this many)
1/2 cup butter or margarine
1 head fresh broccoli, cut into florets
2 (3 ounce) packages chicken flovoured ramen noodles (Mr. Noodles!)
1 cup slivered almonds
1 cup unsalted sunflower seeds
1/2 cup white sugar
1/4 cup apple cider vinegar
1/2 cup vegetable oil
1 teaspoon soy sauce

Directions:

1. In a large bowl, toss together the coleslaw mix, green onions and broccoli. Set aside.
2. Melt the butter in a large skillet over medium heat. Crumble the ramen noodles into a bowl, and mix with the almonds and sunflower seeds. Sprinkle the seasoning packets over all. Add to the skillet; cook and stir until noodles and nuts are toasted, about 8 minutes.
3. In a jar (with a tight fitting lid), combine sugar, vinegar, oil and soy sauce. Seal, and shake vigorously to blend.
4. Just before serving, combine the coleslaw mixture with the nuts and noodles. Pour the dressing over all, and stir briefly to coat.

Makes 12 servings

Vegetable Pasta Salad!

O.K. ladies...here's the recipe for the pasta salad that we served at our "Picture This" event on May 1st! ENJOY :)
Keep in mind that it's a GREAT make ahead dish...it's even YUMMIER the day after you make it!!!

rotini pasta (can use penne) 3 1/3 cups
boiling water 3 L
cooking oil (optional) 1 tbsp
salt 2 tsp

red pepper, slivered- 1
sliced green onions 1/4 cup
fresh mushrooms, sliced- 6
sliced celery (optional) 1/2 cup
zucchini, slivered (optional) 1 to 2 cups

cooking oil 1/3 cup
red wine vinegar 1/4 cup
grated parmesan cheese 2 tbsp
salt 1 tsp
pepper 1/4 tsp
oregano 1/4 tsp
basil 1/4 tsp
garlic powder 1/4 tsp

In large uncovered saucepan cook pasta in boiling water, cooking oil and first amount of salt until tender but firm. Drain. Rinse with cold water. Drain well. Return to pot.

Add next 5 ingredients to rotini in pot.

Mix remaining ingredients together in small bowl. Add to pot and toss well. Makes about 8 cups.

Yesterday I was tired. As much as I hate the concept of "the Bachelor", and don't understand why on EARTH you'd put yourself out there like that (with 24 other desperate women)....I just HAD to stay up until 1 a.m. to see who was eliminated. Pathetic, I know. So Tuesday morning, coffee wasn't even optional...it was necessary, and as I made my way down to my office and was surprised to see a sign taped to my computer screen. It said:
Have an AWESOME day mom. SELL THOSE KITS! LOVE YA! Bryn (hand drawn heart next to her name).
I don't know if it was the encouraging message, or knowing that my daughter was thinking of me or realizing that she's still a very compassionate and loving girl at the (sometimes awkward and challenging) age of 13. It just made me realize that maybe I don't need to fear the teenage years or think too far ahead. Maybe we'll just take it one step at a time. And hopefully, if you know you're loved and valued and you get your worth from what's inside and not your outward beauty and talents...then hopefully I will NEVER EVER see YOU on an episode of "the Bachelor". Lol...

It was definitely worth it!!!

It's not always easy to step away from your life for 24 hours. By the time I found a place that Rylan could sleep on Friday night so that Jordan could go to a lacrosse game, packed Rylan's bags, figured out Bryn's babysitting schedule, bought gifts for Addi's 2 parties, helped Addi pack for her sleepover, find a ride back and forth TO the sleepover, find a ride to the Saturday night party, make sure the litter was clean and the cats were taken care of as well as ensuring that there was food in the house that the kids could prepare.....WHEW....I was exhausted!
BUT...after arriving at our destination and having time to rest, reflect and relax....I realized that all the effort was truly worthwhile. Life can often feel like a balancing act....a constant struggle to balance my priorities. To put all this aside and focus on myself can seem selfish, unnessary and sometimes down right hard.
I guess I just want to remind you...to find time to be still....stop striving and working and enjoy the peace and quiet...no matter how hard it is to get there!

What more could I ask for? A (now complete) Design Team made up of six wonderful ladies from six different provinces across our fair land. As a BONUS, we've added a scrapper from Michigan too! Seven in total...and as my pastoral husband reminded me....7 IS the PERFECT number! So there you have it!!! I can't WAIT to see what the first team doesn't with their first 2 page layout project :)

So, it's almost midnight and I've just completed a project for a future Ninabrook kit! I feel like I could scrap ALL NIGHT...but in return, I'd be a grumpy, short-tempered wife and mother in the morning. It stinks that my best work is done at NIGHT....especially when I'm TRYING to become a morning person. So is it possible to turn yourself around...or am I forever going to be a frustrated night hawk??? I need help. Hello, my name is Sharon and I am a nighthawk.

This year CHA was SO inspiring! The layouts and projects on display were some of the nicest we've ever seen!! My creativity level is at a 10 right now and if I don't design something soon, I feel like I might just EXPLODE!!! Maybe I should grab my bucket of scraps and make a card or something :)
